Chicken In Basil Sauce

For me, it is important that I eat good not just when i’m out, but also when I am home. Good food is a sign of good living and that’s what motivates me to explore a variety of dishes in the comfort of my home.

It is always a successful feeling when I create something different but yummy. It allows me eat different from the usual Nigerian food I grew up with, without breaking the bank or leaving home.

This chicken in basil sauce is different and tasty. It’s what you need when you are craving mall Chinese, but don’t want to spend money on all that greasyness, you’re not sure you’ll enjoy eventually anyway.

Ingredients

For the Fried chicken

chicken Breasts

1 egg

1 cube Knorr or seasoning of choice

2 tbsps corn starch

All purpose flour (for coating chicken)

Black pepper

Oil for frying

 

For the Sauce …

1/3 cups soy sauce

1 tbsp oyster sauce

3 cloves garlic finely chopped

1 tbsp ginger finely chopped

1 tbsp chili paste

Basil leaves

Chilli

2 tbsps corn starch

1/4 cup water

1 tsp oil

1-2 tbsps Brown sugar

 

Method

1) clean and dice chicken breasts. Season with seasoning of choice and black pepper.

2) combine egg and corn starch together, then add diced chicken and leave to sit for 10-15 minutes.

3) remove chicken from egg mixture and coat in flour.

4) Heat some oil up and fry chicken on medium heat until golden brown and crispy.

5) In a bowl, combine soy sauce, oyster sauce and chili paste.

6) In a clean wok, add in a tsp of oil and simmer garlic and ginger till the aroma comes through.

7) Pour in soy sauce mixture and then mix corn starch and water before pouring it into soy mixture. Bring to a boil and let thicken.

8) Add brown sugar one tbsp at a time, 1 tbsp might be enough depending on your sweetness level.

9) Add in basil and chili and let simmer a few more minutes, before adding in fried chicken.

10) Stir chicken until well coated, then remove from heat. Over cooking the chicken will remove the crunchiness.

10) Serve with steamed rice xxx
