So these days, i’m becoming more creative in the kitchen. The other day, I got bored and wanted to bake. I decided to do muffins … and then I decided I wanted strawberry muffins. While digging through my little pantry, I saw the box of coke I had just purchased and thought to myself, why not add in a dash of coke? The dash turned out to much more, but hey I liked it. The cool thing is, baking with soda (well sprite) actually makes cakes fluffier. I baked with sprite a couple years ago, and the cake turned out so moist. Anyways, as usual I have included pictures to show the steps I took.
Makes about 6-8 muffins.
1/2 cup can coca-cola
1/2 cup milk
2 cups flour
1/2 tsp salt
1/3 tbsp baking powder
1 cup sugar
4 tbsp butter (unsalted)
1 cup chopped fresh strawberries
Line your muffin tin with liners or you can spray with non stick cooking spray.
In a bowl, add all your dry ingredients together (salt, baking powder, flour) and mix. Add in your strawberries too. In a separate bowl, whisk your egg until well combined. In the pictures, you see I used a hand whisk. However, I reccommend a proper cake mixer, so that your muffins come out very fluffy. Add your sugar and stir until it is well combined. Melt your butter and add into the mix slowly while you whisk together. Add the milk and whisk until combined.
Now, stir in your wet mixture (in batches) into the dry ingredients and strawberries. Carefully fold in the wet ingredients without over mixing. Stir until the batter comes together nicely.
Spoon the batter into the muffin tins and fill to the brim. Repeat till batter is finished and desired muffin tins are full. Bake muffins at 400 degrees Fahrenheit for 5 mins and then lower to 300 and bake for 20-30 minutes more. You can use a toothpick to check the middle of the muffins to see if done.
You can either serve muffins hot, or wait to cool for decoration. Decorate with strawberry sauce or strawberry jam and strawberries. You can also spray some icing sugar on.
