Hey Beautiful People.! I know, a blog post on food. It’s been ages right? I’m so excited to be doing this. Was even more excited as I cooked yesterday. I haven’t eaten good in ages, and by good, I mean my home cooked meals. This is not because I do not want to or do not enjoy being in the kitchen but because I am tired of eaten the usual rice meals. I always want to branch out with my meals and have not really had the time to. The snow day yesterday pushed me into the kitchen, as I had no other means of eating. I am so happy I was able to throw it down. Here is what I cooked up.
Just before the snow got a little bit heavy, my friends and I rushed down to walmart (one of many grocery stores). Usually, I don’t do poultry or fresh food at the grocery store. It had been my first time in a while at Walmart and I had no choice or absolutely no reason to be picky with my food, unless I wanted to starve. I decided to go with minced meat, since my friend was already buying some red wine. I got some fresh vegetables from the vegetable isle, and decided I will make a mixed veg and minced meat in wine sauce.
Recipe serves 4-6 people, depending on your portions.
For this recipe, you will need;
1 big (scotch pepper) atarodo/Nigerian Pepper
1 Green Pepper
2 Garlic Cloves
3 big carrots
Can Sweet Corn
2 knorr cubes
Small Pack minced meat
What I did;
First, peel and chop half the onion. After which you chop the garlic and dice the green pepper, three carrots and one tomato. Season your minced meat with two knorr cubes, pinch oregano, pinch thyme, pinch curry powder, pinch black pepper, some parsley leaves torn off the stem and a pinch crushed pepper.
In a wok/frying pan, heat some olive oil (not too much). Add in your onions and garlic and let cook till golden brown. Add in your minced meat and cook till well done. Pour in your chopped tomatoes, green pepper. Add in your red wine ( you can add as much as you like, as that is what I do).At this point, taste for seasoning and add salt to taste or pepper if you feel. Add in your carrots and let simmer for about 3-5 minutes then add in your can of sweetcorn.
In a blender, blend quarter of an onion, with four tomatoes and one pepper. In a separate pot, bring blended mixture to boil until thick. Add the cooked mix into your minced meat and mixed veg. Let simmer for about 5 minutes. Taste again for seasoning and add some salt to bring out taste if needed.
In a pot, boil some water with salt and olive oil. When water is boiled, add in your pasta sheets. Boil sheets until soft.
To serve, layer pasta sheets and sauce. In the picture above, I made three heaps. I used parsley leaves and crushed peppers for finishing touches. Serve food while hot. If you are a cheese lover like me, throw on some cheese. I was so hungry by the time I was done, so forgot all about my cheese.
